In the U.S., it’s Labor Day this weekend. It’s thought of as the unofficial end of summer, even though it will continue to be hot for a few weeks yet. Pools are closed even if it’s 95 degrees out, because most kids are now back in school.
For many of us here, this weekend means a picnic at some point. So I have a good, large Picnic Salad planned, which is wonderful to take or serve at pitch-ins. I’ve done both. The recipe makes enough for your family for each dinner meal this weekend, or you can take the whole batch with you to enjoy with friends wherever you happen to be going this weekend. It’s like a classic pasta salad, only tastier, and with fewer carbs! Likewise, I have 3 classic grilled items: burgers, steaks and sausages, only with a fun, easy twist on each. Serve each when it suits you. It’s a holiday, after all!
We’ll finish out the week with a couple of salads (one grilled), some Buffalo Sliders and Asian and Indian chicken dishes.
