It’s been cooler for a few days, but cool is a relative term. Tomatoes, peppers and cucumbers are all going gangbusters here, so I’ve put a lot of them on the menu this week. Zucchini, too, in the form of Grilled Zucchini Ribbon Salad, an unusual but simple and tasty treatment. If you’re faced with mysterious sacks of zucchini left by your door/in your car/on your desk, besides what you’ve been growing or getting at the farmer’s market, it’s nice to have some alternative recipes for it!
We’ll start the week rather pastorally with simple Picnic Chicken and Shepherd’s Salad. We’ll do a grilled surf n’ turf salad, visit India with Curry Burgers and France with a Charcuterie Salad. A little Italian, a little Mexican, a little Asian-fusion and Zucchini Bread for a bonus recipe!
